Rebecca is a nationally recognized expert on the role of food and nutrition during cancer treatment and beyond. She has a Masters of Science degree in Health and Nutrition Education, and is the executive chef for The Center For Mind-Body Medicine’s Food As Medicine Program. She is visiting chef and nutrition educator at Commonweal’s Cancer Help Program in Bolinas, California. In addition, Rebecca has lectured at Stanford’s Comprehensive Cancer Center and John Hopkins Medical Institution.
The Cancer Fighting Kitchen is a beautifully written and illustrated cookbook that is filled with information and recipes utilizing ingredients rich in nutrients that are essential during treatment. There is a special section that addresses managing side effects of treatment, such as nausea, fatigue and neutropenia. Rebecca's recipes are inspiring and nourishing.
In her lecture, Rebecca will discuss how specific properties in foods benefit the body, boost immunity, fight inflammation, and optimize treatment and health. She will teach caregivers and friends how to help loved ones eat well during treatment, including advice on how to overcome taste and appetite changes.
